Fresh Atlantic Salmon Filets in Parchment
with Julienne of Vegetables
Ingredients: | 4 6 oz. Salmon Filets 1 Large Zucchini 1 Large Carrot 1 Large Leek 1 Tbsp. Fresh Thyme 1/4 lb. Butter (Cut in 4) 2 Tsp. Lemon Juice 1/4 Cup White Wine Salt & Pepper 4 Sheets Parchment Paper 12" X 14" (or Tin Foil) |
Instructions: | Julienne Carrot,
Zucchini and Leek, cover with cold water and set aside for 10-15
min.
Divide Vegetables into 4, place one portion of Vegetables in the centre of each piece of Parchment. Place one Salmon Filet on top of each pile of Vegetables. Add Salt & Pepper and Sprinkle each Filet with Fresh Thyme, Lemon Juice and White Wine and Top with the Butter. Pick up 2 Opposite Edges of the parchment and Centre over the Salmon. Fold Edges together (like wrapping a present) until they rest on the Salmon without being tight. Fold the two open ends under the Salmon. Place all 4 Packets on a Baking Sheet and Bake at 400 degrees (F) for 20 min. Use a Sharp Knife to open Packets (Be careful to avoid escaping Hot Steam.) serves 4 |
