Rhodes' French Onoion Soup Gratinée
Ingredients: | 3 lb. Cooking Onions, Sliced 3 cups Chicken Stock 3 cups Beef Stock 1 tsp. Dried Thyme 1/2 tsp. Black Pepper 1 tsp. Salt 2 Bay Leaves 2 oz. Sherry (Optional) 2 tbsp. Vegetable Oil Croutons 8 oz. Swiss Cheese, grated |
Instructions: | In a Heavy-bottomed Pan, heat Vegetable Oil and add Onions
Sautée for a few Min., then lower heat to medium. Stir to prevent onoins sticking. Continue cooking until rich brown colour (about 10-15 min.) Add Salt, Pepper, Thyme and Bay Leaves. Give Onions a good stir to scrape up brown bits at bottom of pot. Add chicken and Beef Stock, Increase heat to full and bring to a boil. Reduce heat to low and Simmer for 30 min. Top with Croutons and 2 oz. grated Swiss Cheese per person. Brown and Melt Cheese in individual bowls under the Broiler if desired serves 4 |
