Chicken Tagine
Ingredients: | 1½ lb. Chicken Breast, Diced 3 medium Onions, Diced 1 oz. Fresh Ginger, Grated Zest of 1 Lemon 1 Tbsp Garlic, Minced ¼ Cup Coriander, Chopped ¼ Cup Parsley, Chopped Pinch of Saffron ½ Cinnamon Stick ½ Litre Chicken Stock ¾ Litre Crushed Tomatoes 1 Cup Sliced Black Olives |
Instructions: | Sautée Onion, Ginger and Garlic in a Large Dutch Oven
Add Chicken and Cook. Steep Saffron in a little warm water and add to Chicken and Vegetable mixture. Add Cinnamon Stick, Lemon Zest and Chicken Stock and reduce by half. Add Crushed Tomatoes and simmer for approximately 1 hour. Add Coriander, Parsley and Black Olives and Simmer for another 10 min. Serve over Cous Cous serves 12 |
