Steak and Kidney Pie
Ingredients: | 900 g. (2 lb.) Beef Steak 1 Beef Kidney 350 g. (12 oz.) Shortcrust Pastry 450 ml. (¾ Pint Beef Stock or Water 2 Onions, Chopped 4 Tbsp. Suet 2 Tbsp. Butter 2 Tbsp. Flour 2 Tbsp. Parsley (Chopped) 1½ Tsp. Worcestershire Sauce ½ Tsp. Salt ½ Tsp. Pepper |
Instructions: | Wash the Kidney, remove membranes and trim; cut kidney into 1" cubes
Cut Steak into 1" cubes. Melt Suet in a Heavy Sauce pan Add the Chopped Onions and Cook, Stirring often, until golden. Add the Steak and Kidney and fry until browned on all sides. Add the Stock or water, Worcestershire Sauce, Salt and Pepper and bring to boil. Cover and cook over low heat 1½ Hours or until steak is tender. Preheat oven to 400°F. Blend the Butter with the flour to make a paste. Drop small pellets of the paste into the sauce and stir to thicken. Place in a Deep Pie dish and Sprinkle with Parsley. Cover with Pastry and make a hole in the top to allow steam to escape. Brush pastry with a little beaten egg or milk to glaze. Bake about 30 minutes or until well browned serves 4-6 |
