Fettuccine with Smoked Salmon
Ingredients: | ½ lb. FRESH Fettuccine, cooked
according to package 4 Tbsp. Vegetable Oil 2 Cloves Garlic, crushed ½ Sweet Red Pepper, julienned ½ Carrot, julienned very fine 8 Large Green Olives, pitted and sliced ½ Cup Chicken Stock 1 Tsp. Fresh Thyme, finely chopped 1 oz. Anise ½ Cup Sour Cream ¼ Cup "half & half"(10%) Cream 1 lb Smoked Salmon, cut into strips Salt (to taste) 4 Tsp. Fresh-Ground Parmesan Cheese |
Instructions: | In a heavy skillet, heat the
oil and add the garlic, peppers, carrot, olives and black pepper. Sautée
over low heat to develop flavours
Add the chicken stock and Thyme and simmer for about 10 minutes to allow carrots to cook. Add the cooked fettuccine and anise and simmer for about 2 minutes. Add the sour cream and cream and turn through the pasta Add the salmon at the end and leave on the heat just long enough to heat through. Add salt to taste. The sauce should be runny. If too much liquid is absorbed, you can add a little more chicken stock and cream Serve in pasta bowls topped with grated cheese serves 4 |
