Brie Cheese Soup
Ingredients: | 2 Tbsp. Flour 3 Tbsp Butter 1 Cup Leeks Chopped into Small Pieces 1 Cup Mushrooms - Button or Sliced 3 Cups Chicken Stock 1 cup (376 g.) Brie Cheese, Cut into Pieces 1 Cup Half and Half Cream |
Instructions: | Sautée Leeks and Mushrooms in Butter until soft.
Add Flour to make a Roux (Paste) Slowly add the Chicken Stock and cook until it thickens Add the Brie and Stir until it Melts. Let Cool, then process in a Food Processor or Blender Return to the Pot and Add Cream. Heat to serving temperature and serve serves 6-8 |
