Chilled Pasta Salad with Shrimp
Ingredients: | 6 Large Plum Tomatoes (Chopped) 1 Large Red Pepper 2 Large Zucchini 1 Large Red Onion 1 Bunch Asparagus 5 Cups Cooked pasta (eg. Fusilli , Penne, Farfalle, etc.) 1 Cup Pitted Black Olives 12 16-20 Sized Shrimp (Peeled & Deveined) 1/4 lb. Feta Cheese (Crumbled) |
Instructions: | 1. Prepare Red Pepper, Zucchini, Red Onions and Asparagus for the Grill. Cut Vegetables into Large, easy to handle Pieces, Toss with a little Olive Oil and Salt and Pepper.
Place on a medium Grill and Cook until soft (about 10 min.) Turn once so both sides cook evenly. Repeat with Shrimp. Set aside to cool. 2. Chop Cooled Vegetables and Tomato Roughly. Place in a Large Mixing Bowl and add Cooked Pasta, Black Olives and Shrimp. Add Dressing (Below) and Toss to Coat. Arrange on 4 plates and Top with Feta Cheese. (serves 4) |
