Ham & Cheese Crêpes
with Dijon Sour Cream Sauce

(you can buy crêpes already made, or make your own - recipe below)
Ingredients (Filling): 1/2 Cup Ham, Minced
1/2 Cup Swiss Cheese, Shredded
1 Egg Hard Cooked and Chopped
1/4 Cup Celery finely Chopped
1 Tbsp. Finely Chopped Parsley
1 Tsp. Sweet Pickle Relish
2 Tbsp. Mayonnaise
1/4 Tsp. Salt
1/8 Tsp. Pepper
Ingredients (Sauce): 1/4 Cup Sour Cream
1/4 Cup Mayonnaise
1/4 Tsp. Lemon Juice
1 1/2 Tsp. Finely Chopped Parsley
1/2 Tsp. Dijon Mustard
Instructions: For Filling, mix all ingredients well.

Use 2 Tbsp. filling mix per crepe and roll; use two crepes per plate

Combine and mix together all ingredients for sauce, and spoon over centre of crepes.

Garnish with parsley sprig or sprinkle with chopped parsley.

Can be served hot or cold.

RECIPE
for FRENCH CRÊPE BATTER
Ingredients: 3 Eggs
1 Cup Milk
1 1/4 Cups Plain Flour
1/2 Tsp. Salt
1/2 Tbsp. Melted Unsalted Butter
Instructions: Beat Eggs and add to the Milk and Water beating eiher by hand or blender.

Sift the Flour with the Salt and gradually add to the egg and milk mixture.

Add the melted Butter and blend thoroughly.

If mixing by hand, strain the batter through a sieve to remove any lumps.

Allow to stand for at least an hour before using. If too thick, add a littlemore water and mix well.

Pour one or two tablespoons of the batter (dependiong on the size of the pan) in the centre of a hot, lightly oiled frypan. Tip the pan to spread the batter and cook until the top is dry. Turn over and cook for 15 seconds on the other side.
