Micheal's Black Bean Soup

Ingredients: 2 Cups Black Beans
1/2 Cup Onion, Chopped
1 Cup Celery, Chopped
1/2 Cup Carrot, Chopped
1 Clove Garlic
1 Bay Leaf
1 Tsp. Sugar
Instructions: Soak Beansover night. Drain and Reserve Liquid

Add Waterto make 10 Cups.

Sautee Vegetables,then Add Beans and Liquid.

Simmer 2-3 hours on low heat.

Add Roux (2 Tbsp. Butter mixed with 1.5 Tbsp Flour and cook for another 15 minutes to thicken.

Purée in blender or food processor until the desired consistency.

Garnish with a Thin Slices of Lemon

Makes 9-10 cups
