Escargots in a Baguette Boat

 Ingredients: 12 whole Escargots (per Person)
1/2 Cup Escargot Butter (recipe below)
2 Scallions Cut on Bias
2 Roma Tomatoes, diced small
1/2 small Baguette (per Person) Hollowed out in the middle, leaving crust
Instructions:

Combine Ingredients and Cook for 1 1/2 min.

Pour Escargot Mixture into Baguette Boats and serve with Lemon wedge and parsley.

Escargot Butter:

Wisk together:
1 Tbsp. Fresh Garlic Chopped fine
1 Tsp. Lemon Juice
2-3 Tbsp White Wine
Salt and Pepper to Taste
4 Tbsp Butter
2 Tbsp Chopped Parsley

Serves 4
