Quick & Easy Caesar Salad Dressing

Ingredients: 2 Egg Yolks
1 cup Olive Oil
1 tbsp. Anchovy Paste
1 tbsp Dijon Mustard
4 cloves Chopped Garlic
6 tbsp Lemon Juice
salt & fresh ground pepper to taste
Instructions: In a Food Processor combine Egg Yolks, Anchovy Paste, Garlic and Dijon Mustard

When combined, with the motor still running, slowly add Olive Oil in a thin stream until the mixture has the consistency of mayonnaise.

Then slowly add Lemon Juice and season with Salt and Fresh Pepper.

Toss with Romaine Lettuce and fresh Garlic Croutons, using about 2 tbsp dressing per serving, and serve immediately

Makes about 2 cups of dressing. Can store for 12-14 days if covered and refrigerated
