Pork Tenderloin with Orange Sauce

Ingredients: 2 Strips Pork Tenderloin
½ Cup Salted Butter
16 Cloves
The Rind of Two Oranges Cut into Long Julienne Strips
2 Oranges, Chopped into medium sized chunks
¾ Cup Brown Sugar
1½ Tbsp. Brandy
1 Cup Orange Juice
Instructions: Cut the PorkTenderloin into ½ inch thick Slices (allow 4-5 slices per person).

In a Large Frying Pan, melt the butter over high heat. Add the Pork Tenderloin and Brown Quickly on both sides. Add the Whole Cloves and Mix with the Meat. Lower the Heat to medium.

Add Julienned Orange Strips, Mix Well. Add the Orange Chunks and Brown Sugar. Mix Well. Add the Brandy and Begin to Reduce. If this seems slow, now is the time to remove the pork slices and set aside.

When the liquid in the pan begins to thicken, add the orange juice. Continue to reduce until you have a clear sauce.

Return Pork to the mixture, ensure that it is heated throughout and serve immediately.

Garnish: Sprinkle with Grated Orange Rind
