Barbecued Skewered Chicken Filets with Mango Relish

Ingredients: 6 Strips of Fresh Chicken Breast (6 oz.)
Salt and Pepper to taste
 Ingredients (Relish): 4 Mangoes (Med.)
2 Tbsp. Diced Red Peppers
8 oz. Orange Juice
3 Tbsp. Chopped Parsley
(Use 1/4 Cup Relish per Portion, Garnish with Chives)
Instructions: Put Chicken Fillets of Skewers Lengthwise.

Barbecue the Skewers as usual.

For Relish:
Peel and De-seed Mangoes.

Finely Dice Mango and Red Peppers.

Finely Chop Parsley, and Mix with Mango and Red Peppers

Add Orange Juice and Mix thoroughly.

Season with Salt and Pepper to taste.

Place Relish in Large Bowl and Spread Cooked Chicken Skewers around Bowl and Garnish with Chives.
