Osso Bucco
with Basil Mashed Potatoes

Ingredients: ~ 6 Lbs. Veal Shanks (1 per person)
2 Tblsp Butter
2 Tblsp Olive Oil
1 Bunch Fresh Oregano (Chopped)
6 Cloves Garlic
1 1/2 Medium Onions (Diced)
3 Medium Carrots (Diced)
3/4 Bunch Celery (Diced)
3/4 Cup Tomato Paste
2-3 Cups Beef or Veal Jus
2 Cups White Wine
Instructions: Season Shanks with Salt & Cracked Pepper

Sautee Shanks in Olive Oil and Butter Until Browned

Place in Roasting Pan with Oregano, Garlic, Onion, Carrots, Celery and Tomato Paste

Bake in Oven until Vegetables are Roasted and Tomato is Brown

Add Beef Jus until Covered and Roast in over for about 2 hours, turning shanksover every half hour

When half done, Add Wine and Cook until tender.

Serve with Basil Mashed Potatoes (Regular Mashed Potatoes with about
1 1/2 tsp. fresh basil added)

serves 4-6
