Easy Hollandaise
(Food Processor Method)

Ingredients: 4 Egg Yolks
2 Tbsp. Lemon Juice
1/2 Tsp. Salt
Dash of Tobasco Sauce
1/4 lb. (or 1 Stick) Unsalted Butter, Melted and Hot
Instructions: Add eggs, lemon juice, Salt and Tobasco. Process for a few seconds

While still processing, add Hot Bubbling Butter slowly

(makes 3/4 cup)

RECIPE
for FRESH MELON with PORT WINE
 (Cantaloupe, Honeydew or watermelons are all good choices for this recipe,
but make sure they are ripe and sweet.)
Instructions: Cut into balls or slices, depending on size.

Make 2 or 3 gashes in the flesh with a spoon

Add a few ounces of Port wine (your choice) and let stand for 1 hour.

Serve in half cantaloupe shells or plate.

Garnish withFresh Berries or other fruit.
