Fresh PEI Mussels in Garlic Tomato Broth

 Ingredients: 2-2.5 lb. Fresh PEI Mussels, Cleaned, Beard Removed
2 oz. Olive Oil (Can substitute. veg. oil)
2 tsp. Chopped Fresh Garlic
1/4 tsp. Salt (or to taste)
1/4 tsp. Fresh Ground Pepper (or to taste)
1/2 cup white wine
1 Bunch Fresh Parsley, Chopped fine
Instructions:

Sautee Mussels until they just start to open
Add 3-4 oz. White Wine.
Add 6-8 oz. Tomato Sauce
Cover and Simmer for 2 Minutes
If Sauce is too thick, thin with a little more wine.
Remove, place in wide bowls and sprinkle with Chopped Fresh Parsley.
Garnish with Lemon

Serves 4
